There are some cool hidden boss fights in the game.

Fight the Headhunting beast with maxed out vorpal blade and you'll see something really, really cool.
Before The Crawling Ones boss fight, if you met both Miranda and Hein, you get an awesome 3vs3 and then another boss.
The Old King boss is in Chaos dungeon.
There's also the Carpenter and Kuti.

Lindamea is best boss. Even better with his his post-patch theme.

Focus on the Horse, then in the second phase use the anchor's ability and single attack Lindamea. Stack immortality and pray is my second best strategy.
