For example, the city of Rolling Green's was expanding its farmlands by a shit ton. The problem? They were reaching the limit of easily accessible suitable farmland in the valley the city was located in. Other areas are difficult to access. The companies there were thinking about vertical farming, but the power draw for such facilities is quite high. Therefore, I just threw money at them for the construction of some new solar farms and a generator. Should keep up for a decent while, if nothing else.
Why solar? As a power source, it's nothing but gimmicky garbage, and building solar farms on the surface will only compound the issue of land shortage around the area. Even at 100% efficiency (which is impossible, because entropy is a thing) solar will never be reliable or productive enough to use as a serious source of power. The closest thing to an exception to that rule is to build massive orbital solar farms that can be of arbitrary size and can stay perpetually in sunlight with the right orbital track, all the while wirelessly transmitting power to the surface. But the issue with those is that it's still wildly inefficient in terms of resources used, not to mention being hideously vulnerable to even a weak pirate/rebel attack knocking them out. Star Wars has access to the tech to build cheap, functional fusion reactors, which are a million times more stable, efficient and powerful than solar. It's literally better in every possible way.
