I know Ditto is a shapeshifter, but it still keeps the same face, and I don't think I could get it up for anything with that face on it.

That actually depends on the skill of the Ditto in question. The one in the anime, where that started from, was an extremely unskilled one.

Secure a blindfold first, photosensitivtity in dark areas and (assumed) luminous eyes would likely be significantly disorienting.

Furthermore, organ type for presumed insectoid? Classic phallus, ovipositor, multipurpose stinger or something more exotic?

Would ovipositor render this a lesbian coupling?

More research required.
